Touka has never been that great a character to me. Still, I think you're in for a ride for season 2.
And I didn't even notice the knuckle cracking thing myself until I was talking about the show with my friend and he mentioned how cool that was. ^^' So we both have him to thank.
I basically had the same opinion on the first season of Tokyo Ghoul.
But then I saw Tokyo Ghoul Root A, and it became amazing.
So, if you're looking for another anime, I suggest its second season. C:
Oh, and the cracking of knuckles doesn't represent anything other than in Jason's torturing of Ken, he ended up creating a second "Jason" - hence Ken cracking his knuckles the way Jason did.

I'm up to the second episode so far, and I'm curious to see how the rest of it goes.
Even with that, I still hate Touka.
And I will also be comparing season 1 sub to season 2 dubbed. That doesn't make sense, but that's fine, I hope.
Huh--now that you point it out, I now notice that only Kaneki and Yamori did it...Good catch.
