It was not real, solid gold that it turns into in alchemy. Pyrite (fools gold) is made using common elements iron (FE) and sulfer (S), yet closely resembles gold (AU). Touching gold wouldn't do anything, unless you were able to make a crust with these elements.
From what I remember, it's usually made from coal.
Maybe when you touch something that's not gold...It turns to gold, meaning that it's color just changes, or it would turn into a mound of actual gold, the mineral...Either or, there is something special about this 'gold' you turn things into...Something must be chemically or physically special.
Now, if you touch actual gold, I guess it'd turn into this special gold that you create by touch.

Nothing would happen if you touched gold xD. It would also turn to gold, or in this case, just stay the same. Though that is only my opinion ^^
