I love how the whole time the group just sounds like even they don't know what to do with it. Like when the head first REALLY moves, the one girl goes "Uwah! That's really scary!" But y'know, in more of that fascinated, amazed way.
I really can't say how they do it either, but I can attest that fish heads ARE pretty ridiculously hardy. Ling Cod at the asian supermarket, the head'll be chopped off and placed on those "deli sliders" behind the glass. I think it's possible the head is still attached to the heart or something, but yeah. Dismembered head will move and actually kind of inch its way down the thingy with what little fin/muscle it can use.

Hm... I have no idea how the fish would still be alive. I suppose if it was a very short cook time and it wasn't killed prior to being in the frying pan, it might just have enough life left in it.
The other option is that head is animatronic. Which I sincerely hope it is. x_x
