In my opinion, Angel Beats, .hack//SIGN, Macross Frontier and Gundam SEED have really good vocal pieces. I'd also recommend:
- Fate/Stay Night OST(the piano pieces are nice)
- Vampire Princess Miyu OST(this one is really good if you're a fan of traditional Japanese music :D)
- .hack//G.U. (it's a game, but the OST is quite nice...I'd recommend "Liar's Smile" and "Deepest Memories" for a start, as there are some lovely instrumentals of those two songs)
- Tsubasa Chronicles OST (really good OST :D)
- Macross Plus OST (I don't know if this is your type of music, but it's one of my favourite OSTs. There are some nice orchestral tracks and also really good vocal ones.)
- Noir (one of my favourites)
- Gundam Unicorn (Has really good orchestral pieces. For a sample, you could try Unicorn, my favourite track in the OST)

PS: OMG I forgot about the Evangelion OST!!! @A@...But if I'm not mistaken, you're an Evangelion fan right? :DDD (So I'm safe...LOL XD)
