The Azucena or Empress Flower (that's how we call it in my country), in Japan, means shyness.
I think it's best represented Hinata because she's always shy and has no confidence to talk to Naruto. The falling petals represent the moment when she's finaly able to talk to him and little by little exceeds this barrier.
