For this effect, the camera was turned off while our elderly actor got out of the shot. We then inserted his bearded stunt double, who we knocked out and promptly cut in half. After rigor mortis set in, computer effects were used to delete all the dried blood. And then, for a professional touch, we added in this cute little green screen effect to help soften the cruelty of the image.

Or, we used a plaster dummy.... You be the judge!
